Gluten free muffins chocolate



 

Ingredients:

 1 cup butter or margarine ( I prefer butter)
3/4 cup chocolate cream like Nutella
2/3 cup sugar
1 teaspoon vanilla
¼ teaspoon salt
4 egg
1 cup gluten free flour
1 teaspoon backing powder gluten free
3/4 cup small pieces of dark chocolate

Preheat oven to 350  F (gas mark 4 or 180  C).
Use 6 extra large muffin tins or cups (paper muffin bake cups are recommended) or 12-15 medium cups.
Melt butter and mix it with chocolate cream until smooth. Add sugar and vanilla. Beat in first egg mixing for half a minute and add 3 more eggs like that. Stir in pieces of chocolate and mix well with the spoon.
Fold into muffin cups and bake at 350 F, until a wooden pick inserted in center comes out clean, about 30 minutes for XL muffins or about 20 minutes for medium size muffins.
Cool for 5 minutes before removing from pans to wire racks.

Gluten Free Muffins may be served hot or at room temperature.

Makes app. 24 servings

2 cups glutenfree flour

 2 tsp. baking powder

2 eggs

1 cup  light brown sugar

1 cup butter softened

 1 tsp. vanilla

 2 cups sour cream

 1 cup blueberries

 24 paper muffin models

 Combine eggs, sugar, vanilla, butter and sour cream into a creamy mixture.

Add flour with baking powder. Mix well. Carefully stir in blueberries.

 Fill paper models with the mixture.

 Bake at 350 F  for 25-30 minutes until goldenbrown.

 Let them cool on the rack.

Chocolate chip cookies


Gorgeous cookies. They will melt in your mouth and you will completely forget that you have ever  longed for sweets, that were not glutenfree.

Ingredients:

1 cup  butter, softened (not melted)

3/4 cup white sugar

3/4 light brown sugar

1 teaspoon vanilla extract

2 eggs

2 in 1/4 cup glutenfree flour

1 teaspoon baking powder or baking soda

1/2 teaspoon salt

2 cups chocolate chips or chunks

1 cup chopped nuts (optional)

Preheat oven to 375 °F or 175°C.

Beat butter, sugar, brown sugar and vanilla in a bowl with mixer until creamy.

Add eggs, beat well. Stir together flour, baking soda and salt, gradually add to a butter mixture. Blend well.

Stir in chocolate chips or chunks and nuts. Drop by teaspoons onto ungreased cookie sheet (you can use paper for baking). Bake 8-10 minutes or untill lightly browned. Cool slightly. Remove from cookie sheet to cool. Cool completely.

Store in a cookie jar in a cool and dry place.
